  1. 32 oz.vegetable broth
  2. 15 oz.chicken broth
  3. 2 Ttomato paste
  4. 1-1/2 tsp.oregano
  5. 1/2 tsp.basil
  6. 1/4 tsp.sage
  7. 1 tsp.salt
  8. 1/4 tsp.black pepper
  9. 2bay leaves
  10. 3carrots or 1/2 bag baby bite size
  11. 3celery stalks bite size
  12. small onion bite size
  13. 4garlic sprigs minced
  14. 1large potato bite size
  15. bagfrozen cut green beans
  16. 15 oz.can black beans rinsed
  17. 15 oz.diced tomatoes
  18. 4 cupsbaby spinach
  19. 1 cupnoodles

60 mins
  1. 1

    Add all ingredients to pot except spinach and noodles. Bring to a boil, cover and simmer 1/2 hour. Discard bay leaves. Add spinach and noodles and simmer another 10 minutes or until pasta is tender.

  2. 2

    In crock pot: Add all ingredients to pot except spinach and noodles. Cook on low for 8 - 10 hours or high for 3 - 5. Discard bay leaves. Add spinach and noodles 15 minutes before you're ready to serve or until pasta is tender.

  3. 3

    Serve with parmesan cheese or cheese of choice, crackers and bread. If you're on a diet like I am skip this step :)

Our daughter made this soup for a family gathering and everyone agreed it was the best minestrone soup they ever had.
