Bengali’s one of the favourite Sunday breakfast is “luchi- alur dom”. Here “Luchi” is nothing but the plain puri.
“Luchi & alur dom” is also a traditional form of food offered to god in many of Bengali’s “puja” or celebration of idol worshiping.

Steps

Luchi/Pure - Place a refiend flour or Maida in a bowl, make a well in the center, add pinch of salt and little bit of oil and mix.

Add lukewarm water and khnead into a dough. Cover and rest for 10-15 min to rise.

Divide the dough into small equal portions. Press a portion of the dough flat on a rolling board and roll out. Using little plain flour for rolling and roll it on round shape like puri.

Heat oil in a deep pan and add the puri and fry it.

Alur Dim- Boiled the potato complitely.

Heat oil in a pan add some spices, red chilli whole & cumin seeds & satue till the fragrent.

Then add ginger paste & salt and all the masala and little bit of water and stire.

Then add green chilli & tomato and mixed. Cover and cook 2-3 min.

Add sugar & the boiled potato. Cover and cook 5 min in low flame & then add water and stir.

Again cover & cook 5 min and then add ghee and garam masala powder.

Garnishing with some Coriander leave and serve hot with bengali Luchi.
