Ingredients

1 hour
3 servings
  1. 1/2 cupbasmati rice
  2. 750 mlsugarcane juice (freshly prepared)
  3. 2 tspmilk (to remove the impurities in the sugarcane juice)
  4. 1/4 tspsalt / rock salt (optional)
  5. 1/2 cuproasted peanuts
  6. 1/4 cuproasted cashew nuts
  7. 5-6roasted almonds
  8. 1/2 tspcardamom powder
  9. Some dried rose petals (for garnishing)

    Wash and soak the rice for 15 minutes and strain the sugarcane juice.

  2. 2

    Put it on the gas stove and allow it to boil. While it starts boiling add the milk in it.

  3. 3

    Remove all the impurities over it.

  4. 4

    Then add the soaked rice in it.

  5. 5

    Mix the salt in it(this step is totally optional as Punjabi people do not add salt in this kheer, but I prefer it because it retains the sweetness of kheer).

  6. 6

    Cover the lid and stir it occasionally otherwise it may burn at the bottom in low flame.

  7. 7

    After 45 minutes add the roasted peanuts in it.

  8. 8

    Then add the roasted cashew nuts in it.

  9. 9

    Add the roasted almonds in it.

  10. 10

    Mix it well and now add cardamom powder in it.

  11. 11

    Mix it well and cook it for again 2 minutes and then switch off the flame. Now your Roh di kheer is ready.

  12. 12

    Serve hot or cold by garnishing some rose petals, roasted dry fruits.
