Make a simple and delicious vegetarian oyster omelette at home using fresh straw mushrooms for a tender, juicy texture and nostalgic flavor. If you don't eat eggs, you can leave them out.

Wash and drain the straw mushrooms. Wash the greens and cut them into sections.

Bring a pot of water to a boil. Blanch the straw mushrooms, drain, coat them with sweet potato starch, then blanch again until they turn translucent. Remove and set aside.

Heat oil in a pan. Add the straw mushrooms, then pour in the batter. Place nori sheets on top.

Add the greens, pour in a bit more batter, flip to cook the other side, move to one side of the pan, and crack an egg on top.

When everything is cooked through, transfer to a plate, drizzle with sauce, and serve hot.

For the sauce, bring all the sauce ingredients to a boil. Thicken to your desired consistency with the sweet potato starch mixture. The sauce is ready.
