I prefer this capirotada because it doesn't use cheese like the traditional version. I don't like the taste of cheese in the bread, and I find it more complicated to make.

In a large bowl, add the melted butter and eggs. Beat with a mixer, then add both milks and continue beating until well combined. Set aside.

Toast the bread on a griddle or skillet until golden but not burnt. In a baking dish, pour a little of the milk mixture. Dip the bread slices in the mixture and layer them in the dish. Add chopped walnuts, raisins, and shredded coconut between layers. Repeat until all ingredients are used. Pour the remaining milk mixture over the top and cover with aluminum foil.

Bake in a preheated oven at 350°F (180°C) for 20 minutes or until it sets and dries out a bit. Enjoy, it's delicious! 😋
