Kue Koci

It is traditional Indonesian snack, steamed glutinous rice flour with sweet grated coconut filling wrapped in banana leaves.

Sweet grated coconut is made from fresh young grated coconut, some water and palm sugar, cook it over low heat, stirring often until the liquid is almost evaporated, and continue cooking until there is no liquid left. Remove from the heat and let the mixture set until it is cool enough to handle.

The original kue is made from white glutinous rice flour with coconut milk. But I like to add my kue koci with black glutinous rice (soak the rice over night and blend it smoothly with some coconut milk) or steamed and mashed pumpkin or sweet potato or yam.

Ingredients

  1. For the filling:
  2. 300 gyoung grated coconut
  3. 150 gpalm sugar
  4. 50 mlwater
  5. 2pandan leaves, torn small
  6. 1 tspglutinous rice flour
  7. 1 pinchsalt
  8. For the glutinous rice dough:
  9. 4 tbsp.black glutinous rice. Soak over night, blend with some of coconut milk until smooth
  10. 300 gglutinous rice flour
  11. 250 mlcoconut milk
  12. 1 tbsp.sugar
  13. 1 pinchsalt
  14. Banana leaves for wrapping, cut into 10cm diameter round

Steps

    For the filling: put together sugar, salt, pandan leaves and water into a sauce pan, bring to boil until the sugar has melted.

  2. 2

    On low heat, add in grated coconut, and cook until the liquid is almost evaporated.

  3. 3

    Sprinkle in the glutinous rice flour, continue cooking until there is no liquid left.

  4. 4

    For the glutinous rice dough: put all ingredients in a large mixing bowl, knead well to form a smooth dough. Divide the dough equally into 15 pieces.

    Put one piece of dough on your palm, flatten it.

  6. 6

    Add 1 tsp the filling in the centre of the dough, gather up the edges to seal the filling inside.

  7. 7

    Fold a piece of banana leaf into a cone, put in the filled dough, wrap and tuck in with a toothpick the end neatly. Steam for 15-20 minutes.
