Easy and delicious prawns with a jalapeno twist. This recipe can be made on the stove, oven, braai, etc. So it's extremely versatile. The cooking times will have to be adjusted but just bear in mind that prawns cook extremely quickly and as soon as you see the shells turn a reddish colour and the flesh starts pulling away from the shell then you know it's just right

Devein and butterfly prawns. Leave head on if you prefer. Rinse prawns and drain in a colander

Mix the chopped garlic cloves, green ginger garlic paste, turmeric, Kashmiri chilli, salt, pepper, lemongrass powder, mayo, jalapeno sauce and lemon zest together till combined. Rub the marinade onto the prawns

Marinate for minimum 15 min to overnight. If you marinating for less than 15 minutes then add a squeeze of lemon juice to the marinade for extra flavour. I don't add lemon juice when I marinate seafood overnight as I find that it breaks down the prawns

Start a braai or use a gas stove. The heat should be medium heat

Put prawns face down till you see shell starting to change colour, flip over onto shell. Leave till shell turns a pink reddish colour

Baste the prawns with the leftover marinade and garlic parsley butter

Take prawns off the braai/gas stove and squeeze lemon juice over. Enjoy!
