Heat oil. Fry onions and garlic till light pink. Add in chopped/washed spinach.. Cook for 3 minutes. Make a hole in the centre of the spinach.. Add all the spices. After 1 minute mix the spinach/spices and let it cook for a further 3 to 4 minutes or until most of the water evaporates

In a separate bowl.. Mix 2 to 3 tblspn flour with Half a cup of milk and the nandos pepper sauce. Make a hole in the centre again. Add a small blob of butter.. pour this liquid mixture into the centre of the spinach.let it simmer till it thickens and mix everything together.

Once the spinach mixture thickens and becomes saucy remove from heat and allow to cool

When it's completely cool add 2 cups of grated cheese.i use cheddar cheese. Mix all well and fill into pie cups. (Using butter or puff pastry as a base) cover with pastry. Eggwash and bake for 40 mins on 180 degrees or freeze.
