Ingredients

300 mins
8 servings
  1. 1 cupchickpeas
  2. 3 cupswater
  3. quarter cup lemon juice
  4. quarter cup olive oil
  5. 2 clovesgarlic roughly chopped
  6. 2extra tablespoons of water
  7. 1/2 teaspoonsalt
  8. sweet paprika to garnish

Steps

  1. 1

    Soak the chickpeas in water for 4 hours or preferably overnight.

  2. 2

    Drain and place in a pan, and water and bring to the boil.

  3. 3

    Simmer uncovered for one hour then drain.

  4. 4

    Place the chickpeas lemon juice, oil, garlic, water and salt into a food processor and using the pulse action process for about 30 seconds or until smooth.

  5. 5

    Sprinkle with the paprika and serve as a dip with pita bread or as an accompaniment for falafel
