Having trouble getting your child to eat good fish? Tired of serving frozen breaded fish? Here’s an easy, foolproof recipe: Salmon Cordon Bleu!

Take your 4 fresh salmon fillets.

Cut a pocket into each salmon fillet. Be careful not to cut all the way through—just make a pocket.

Take your 4 slices of smoked salmon. Fold each slice in half and stuff one slice into each salmon fillet pocket.

Slice some shredded mozzarella cheese and add it inside each salmon fillet.

Lightly season your salmon cordon bleu with salt and pepper, add lime juice to taste, then sprinkle with ground ginger and garlic powder.

Beat the 3 eggs and mix in the fresh chives.

Get your breadcrumbs ready.

Preheat your oven to 300°F (150°C) with convection.

Set up two bowls: one with flour and one with breadcrumbs. Dip each salmon cordon bleu in the beaten egg on both sides, then in the flour, back in the egg, and finally coat with breadcrumbs. Bake for 30 minutes at 350°F (180°C). If the breadcrumbs aren’t golden and crispy enough, increase the temperature to 400°F (200°C) and keep an eye on them.

Your tender and crispy salmon cordon bleu is ready! I served mine with spinach farfalle pasta. Everyone loves it, even the little ones! (You can, of course, customize this recipe with other fish and cheeses.)
