Buttery garlic and herbs new potatoes

The potatoes are crispy from the outside and very fluffy from the inside. Works well as a side dish. I sometimes have to add extra butter and oil, (so feel free to increase the quantities) to make it extra crispy, plus I like dipping the bread into the flavoured oil and eating it. And also the baking time can be adjusted according to your preference of the crispiness of the potatoes. I normally use salted butter (if you use it, just be careful when adding salt), but you can use unsalted butter too.

Preheat the oven at 180°.

In a pan heat the oil and butter at medium heat. Once the mixture is hot, add the new potatoes to it, ensuring they are evenly coated. Season with salt.

Place the potatoes in a roaster along with the melted butter and oil from the pan. Place the roaster in the oven and bake the potatoes for 30mins turning them at regular intervals.

Add garlic, green chillies and herbs to it and mix well. Bake for 15 minutes or till the potatoes are golden and crispy. Take the roaster out of the oven and serve.
