Preheat the oven to bake from the bottom only. Grease the baking pan with oil and dust it with flour, or line it with parchment paper.

In a blender or electric mixer, beat the eggs well. Add the sugar and beat again. Gradually add the oil in three parts or pour it in slowly while the mixer is running. Add the milk in the same way as the oil, then add the vanilla extract and a pinch of salt. Mix well.

Pour the mixture into a large bowl. Sift in 1 cup of flour and gently fold it in to incorporate air. Add the second cup of flour the same way, along with the baking powder. Mix the batter well by hand for no more than 2 minutes.

Pour the batter into the prepared pan and bake in a conventional oven at 350°F (180°C) for 40 minutes. For a hotter oven (300–305°F or 150–151°C), bake for 45 minutes. In the last 5 minutes, turn on both the top and bottom heat to give the cake a golden color.

For an 8-inch pan, use 2 eggs and 1 1/2 cups flour (about 190 grams); keep the other ingredients the same. (See photos for 8-inch pans)
