Zucchini

Nopales (cactus paddles)

Ingredients

60 minutes
4 servings
  1. 1 2/3 lbspork ribs (or another cut) (about 750 grams)
  2. 20small tomatillos
  3. 10green chile de árbol peppers
  4. 2large garlic cloves (for cooking the meat and for the sauce)
  5. 1/4onion (for cooking the meat and for the sauce)
  6. Salt, to taste
  7. 3-4bay leaves
  8. 12 ozfresh fava beans (about 350 grams, or to taste)

  1. 1

    Bring a glass of water to a boil (use enough water to cook the meat, but not so much that it covers it completely).

  2. 2

    Once the water is boiling, add the washed pork, garlic, onion, bay leaves, and a little salt. Cover the pot.

  3. 3

    Cook the pork for 30 minutes.

  4. 4

    Uncover the pot to let the water start to evaporate.

  5. 5

    Meanwhile, cook the fava beans in boiling salted water for about 10-15 minutes. Turn off the heat, drain, and remove the skins from the beans (set aside).

  6. 6

    Remove the garlic, onion, and bay leaves from the pork, then sauté the meat.

  7. 7

    When the pork is browned to your liking, add the sauce.

  8. 8

    As soon as it starts to boil, add the fava beans. Simmer on low heat for 10 minutes.

  9. 9

    And that's it... It's delicious. Serve with rice or beans.

    Boil the tomatillos with the chiles. Blend with garlic, salt, and onion (enough for your amount of meat).

    Once the pork is cooked and the water has reduced, add a splash of oil.
