In a bowl, mix together the ground beef, ground pork, egg, crushed crackers, garlic, 1/2 cup chopped onion, salt, and pepper to taste.

Form the mixture into meatballs. I made 7 large ones (one disappeared before the photo 😁), but you can make them smaller if you prefer. Make a hole in each meatball, insert a cube of cream cheese, and cover it completely with the meat so the cheese doesn't leak out while cooking. Set aside.

Blend the tomatoes or tomato puree (I prefer puree for a thicker sauce), chipotle pepper, and 1 cup water. Adjust the amount of water to get your desired sauce consistency.

In a pot, heat oil and sauté the remaining onion until translucent. Add the blended tomato mixture, chicken bouillon cube, salt, and pepper. Bring to a boil and simmer for about 10 minutes.

When the tomato sauce starts to boil, gently add the meatballs one by one. Cook for about 30 minutes, turning carefully so they cook evenly.
