Ingredients

Serves 3 servings
  1. 1 packageRitz crackers (I ate about 4 😁)
  2. 9 ozground beef (250 grams)
  3. 9 ozground pork (250 grams)
  4. 1 cupchopped onion (about 150 grams)
  5. 1egg
  6. 1 clovegarlic, minced
  7. Oil
  8. 6large tomatoes, boiled and peeled (you can use seasoned tomato puree)
  9. 1small chipotle pepper (just for flavor)
  10. 1chicken bouillon cube
  11. A fewsprigs fresh parsley, chopped
  12. Salt, to taste
  13. Black pepper, to taste

    In a bowl, mix together the ground beef, ground pork, egg, crushed crackers, garlic, 1/2 cup chopped onion, salt, and pepper to taste.

    Form the mixture into meatballs. I made 7 large ones (one disappeared before the photo 😁), but you can make them smaller if you prefer. Make a hole in each meatball, insert a cube of cream cheese, and cover it completely with the meat so the cheese doesn't leak out while cooking. Set aside.

  3. 3

    Blend the tomatoes or tomato puree (I prefer puree for a thicker sauce), chipotle pepper, and 1 cup water. Adjust the amount of water to get your desired sauce consistency.

  4. 4

    In a pot, heat oil and sauté the remaining onion until translucent. Add the blended tomato mixture, chicken bouillon cube, salt, and pepper. Bring to a boil and simmer for about 10 minutes.

  5. 5

    When the tomato sauce starts to boil, gently add the meatballs one by one. Cook for about 30 minutes, turning carefully so they cook evenly.

    And you're done!
