Roasted Tomato & Garden Herb Pasta Sauce

Tried and tested method of placing ingredients in an oven dish, sealing it with foil, putting it in the oven and crossing your fingers that it works out ok! I use this method often on week days when I’m also making tea for the children, preparing packed lunches and doing homework 😅 I used herbs from my garden and they gave this simple dish has such a beautiful fresh flavour. Place the onions on the base of a smallish oven dish.

Put the tomatoes over the onions, then add the rest of the ingredients.

Seal with foil and bake for a good hour, more if needed for the tomatoes to be nice and soft.

Remove the tomatoes from the oven and allow to cool as you cook your pasta.

Blend the sauce really briefly, I gave it about 20 seconds! Then mix with your pasta. Season again to taste and serve.
