Ingredients

5 minutes
2 servings
  • 2 cupsCooked rice (not hot)
  • 1/4 cupcool milk
  • 1 cupCurd
  • to tasteSalt
  • 2green chillies (finely chopped)
  • 2 tbspVegetable oil
  • 1 tbspUrad dal
  • 1 tspMustard seeds
  • 3 pinchesAsafoetida
  • 8-10 Curry leaves
  • As requiredPomegranate seeds (for garnishing)(optional)
  • 2 tbspCoriander leaves (finely chopped) (for garnishing)

Steps

5 minutes
  1. 1

    In bowl add in the cooked rice (not hot),mix 1/4 cup cold milk to adjust the consistency then add the curd and salt to taste,mix everything really well.

  2. 2

    For tempering heat a pan add in the cooking oil when the oil gets heated add in mustard seeds and urad dal let them crackle for 10 -15 seconds then add asafoetida and curry leaves let curry leaves splatter for 5 seconds switch of the heat

  3. 3

    Add the tempering into the curd rice mix and mix the tempering well with the rice

  4. 4

    Take curd rice out on a serving dish garnish with some coriander leaves and pomegranate seeds

  5. 5

    Serve cold, tastes best cold.
