Ingredients

  • 1 1/2 cupAya (tigernut: soak overnight)
  • 1small sweet potato
  • Ginger
  • Dabino (dates)
  • Sugar
  • Milk

Steps

  1. 1

    Wash and rinse the nuts, remove dirt and wash again. Set aside and peel the sweet potatoes.

  2. 2

    Cube the potatoes and wash, set aside as well.
    In a blender, add the nuts, potatoes, ginger, dates (dabino) and blend until soft. Use a cheesecloth/muslin to squeeze out the milk.

  3. 3

    Add a little water to the extract and squeeze out more milk. Discard the pulp (flesh)
    Add sugar and milk & flavour to desired taste (optional). Refrigerate and serve chilled.
    Voila!
