Unripe Guava(known as Dhasha pyara in Bengali or Kachhe Amrud in Hindi) though a very popular fruit becomes useless once it loses its freshness which in the heat of Indian summers can be as short as half a day. Though rie guavas are used in Jams and jelly the slight sour and slight bitter taste of the unripe ones render them tasteless. This recipe is a way to turn the guavas into a Jam without tampering with the flavour.

Ingredients

  1. Guavas 3 pc roughly chopped
  2. 4 cupsSugar
  3. 2 tspCumin powder
  4. 1 tspWhole cumin
  5. Ginger 1/2 inch finely chopped
  6. 1 tspChilli powder
  7. Bay leaf 2 pc
  8. 1 pinchSalt
  9. 2 tspChat masala
  10. 2 tbspOil
  11. 2 cupsWater

    Half of the sugar was caramelized with the bay leaves

  2. 2

    The Guava was added to the caramelized sugar and boiled in 2 cup of water with some salt

  3. 3

    Once the water was almost absorbed leaving a thick caramel and soft guavas the guavas were blended with the sugar syrup and strained to remove the seeds

  4. 4

    In a pan oil was added and cumin seeds and ginger was tempered. The chilli powder and cumin powder was added followed by the rest of the sugar and caramelized.

    To this caramelized mixture the pureed Guava is added and kept on medium heat till it reaches a thick consistency

  6. 6

    Once the desired consistency is reached the chat masala is added and the jam is poured into a container and served as a savoury jam.
