Steps

In a bowl add crushed citric acid, sugar and water. Mix till sugar and citric acid dissolve in water.

In another bowl take besan and add the above water mixture. Mix well and make sure no lumps are formed

To the mixture add, turmeric powder salt and ginger paste. Mix well and add 1/2 cup of water to make it in pouring consistency. Keep the mixture to set for 15 minutes. In the meanwhile preheat the kadhai for steaming.

After 15 minutes add baking soda.. Mix for 10-20 seconds and pour in greased tin.

Place the tin in kadhai on medium high flame for 20 minutes.

In meantime, prepare the tadka for khaman. Heat a pan and add 2tsp oil, mustard seeds, curry leaves and slit chilli.

Add 1 cup of water and 3 tsp Sugar. Mix till sugar dissolve. Let the tadka cool down

After 20 minutes, insert a knife or toothpick if it's cooked knife should come clean. Otherwise cover and cook for another 5 minutes. Let khaman cool for 5-10 minutes.

Once khaman cools down, with the help of knife separate the sides of khaman and then transfer it to another plate.

Spread the tempering over khaman. Garnish with chopped coriander leaves. Cut the khaman into square shape pieces. Khaman is ready to serve with Green Chutney.. ENJOY!!!
