  1. 1ripe avocado (Hass or Fuerte)
  2. 1 packagesmoked salmon
  3. 2fresh eggs
  4. 4 slicesfresh bread made with durum wheat flour
  5. 1 tablespoonextra virgin olive oil
  6. Freshly ground black pepper
  7. Chia seeds

Cooking Instructions

    Toast the bread slices on a grill pan or in a toaster. Before toasting, sprinkle them with a little salt and freshly ground black pepper. Once toasted, drizzle with extra virgin olive oil.

    Fry the two eggs sunny side up. Sprinkle salt on top.

    Cut the avocado in half, remove the pit and skin, and slice it lengthwise into thin slices, about 1/12 inch (2 mm) thick.
