Preheat the oven to 350°F (180°C).

Melt the butter and add the orange food coloring. Shred the kunafa dough and rub it with the melted butter and coloring.

Grease an 7-inch (18 cm) round baking pan with butter, then press the kunafa dough evenly into the pan.

Mix the mozzarella and sweetened Akkawi cheese, drain any excess water, and spread the cheese mixture over the kunafa dough in the pan.

Note: Spread the cheese in the center, keeping it away from the edges.

Bake for 20–25 minutes, or until the edges of the kunafa are lightly golden.

Invert the kunafa onto a serving plate and pour 1/4 cup (60 ml) of simple syrup over it, or adjust to taste.
