Mirchi Vada

Here's a Rajasthani delicacy many of you must be already aware of. I wait eagerly for this time of the year when we get the best chillies for trying various recipes. The chillies are bit hot so I haven't added any chilli or paprika to the stuffing. You can also try this recipe by dipping the stuffed chillies in besan batter, especially if you need a tea time snack. Nothing beats fried Indian snacks on rainy evenings with earthy, fragrant atmosphere outside.

1. Boil, peel and mash potatoes.

2. Finely chop onion, carrot, ginger and coriander.

3. Slit and deseed chillies.

4. Stuff the chillies with potato mixture.

5. Dip 1 slice of bread in water. Take it out on your palm and gently squeeze. Wrap it around the stuffed chilli, squeeze again and correct the shape.

6. Repeat this with remaining chillies.

7. Deep fry till golden brown.

8. Remove on a paper towel and serve with green chutney.
