First of all wash and dry bhindi and then slit it in 4 parts each.

Add all the dry masalas in it and mix it well. Keep aside for 10 to 15 minutes so that bhindi absorb the masalas in it.

Heat oil in a pan. Just before frying add 1 spoon of besan/gram flour to the bhindi and mix it well so each bhindi is coated with it and then put it in the oil in small quantities so it would be easy to fry it. Fry till they change colour from green to golden brown.

Your kurkuri bhindi is ready. Eat it with chapati as veggie or serve it as a tea time snack.
