Cooking Instructions
- 1
To sanitize a glass jar, pour boiling water in the jar, drain well and air dry.
- 2
Wash plums gently, remove hulls with a bamboo stick, and dry well with paper towels one by one. Please make sure the plums are dried well otherwise the moisture of plums will cause growing mold in the jar.
- 3
I recommend using rock sugar for making plum wine. It takes time to dissolve and that means it helps to extract the flavors from the plums at a slower pace.
- 4
To make plum wine, we need distilled spirits at 35% alcohol by volume.
In Japan, A kind of distilled liquor called White Liquor is commonly used for plum wine. Vodka can be substitute for white liquor if you cannot find it in your country. - 5
Layer the plums and the sugar alternately in the jar and pour over white liquor.
- 6
Put the lid on the jar and store in a cool, dark place. You can start drinking Umeshu after it’s been resting for at least 6 months. You need to be a little patient but it is worth waiting!
Give the jar gently shake everyday to mix sugar and the liquor well for the first month. Better to write the date you started on the jar so that you can remember when the plum wine gets drinkable!

California Farm Plum Harvest California Farm Plum Harvest
Our plums are starting to ripen, and all at once. Here is how we process the ones we dont eat directly from the tree or give away. We added a Japanese plum wine recipe here and published a separate recipe for Amish plum wine. You can grow plum trees from ripe pits: scrub the pits, put in bowl of water, discard the floating ones, plant three pits in one planter hole in a large cloth planter pot with handles or in a planter bed in a sunny location.Plant in fall, they need winter cold to germinate. They will sprout in spring. Select the most vigorous one, remove other two.Drag planter pot around till you find a sunny location where the young plum tree flourishes.#GlobalApron Hobby Horseman -

Supreme Basic Umeshu Plum Wine Supreme Basic Umeshu Plum Wine
I wanted to make something better than the commercial umeshu! I tried countless times to perfect the recioe, I've forgotten how many jars I've made. The final recipe has captured the hearts of my family, boyfriend and friends. It's an umeshu that is so good.Choose hard ume plums that have very little damage on the surface. The ume essence will be extracted into the liqueur easier, and the liqueur is less likely to become cloudy.Nankou-bai variety ume plums have the same-sized pits whether they are marked small or for 4 liters. The only difference is how much fruit is surrounding the pit. Pick meaty ones. Recipe by Umemikkii cookpad.japan -

Scent of the Tropics Pineapple Liqueur Scent of the Tropics Pineapple Liqueur
There's a bar I go to that makes lots of fruit liqueurs. They taste really good so I asked them how to make it at home and now I'm trying out lots of different flavors on my own .Add as much crystal rock sugar as you'd like, but if you make this drink really sweet, it will help preserve the fruit. A sweeter one tastes great when mixed with sodas or wine. Recipe by acchicchi cookpad.japan -
Pomegranate Flavored White Rum Pomegranate Flavored White Rum
I made this after finding some pomegranates in the supermarket! I heard that pomegranates are particularly good for women as they contain a certain hormone so I'm looking forward to trying them!!After much thinking I decided to make a clear, white rum. Please steep the fruit of the pomegranates after thoroughly wiping away any excess water. I removed any pomegranate seeds that got crushed. After taking out the seeds, let the mixture rest for at least 6 months, or if you can wait that long, 1 year. Recipe by ka8to9 cookpad.japan -
Cook for 15 Minutes Delicious Plum Jam Cook for 15 Minutes Delicious Plum Jam
Whenever I've looked for a plum jam recipe they all describe countless hours of simmering in a saucepan. I'm too impatient for that so I tried using the method that I usually use to make strawberry jam to make a plum version and it turned it really well.Caution Please use a large, deep bowl as the jam has a tendency to bubble and spill over during cooking! You should be able to take any seeds out with ease after cooking. Homemade Black Tea Liqueur Homemade Black Tea Liqueur
Since Kahlua Milk exists, I thought that a tea version should work too! I wanted to try it, but around these parts they only sell tea liqueur in big bottles and it's expensive. I had some white liquor left over from making fruit liqueurs, so I sort of winged it to use up leftovers, but the results were pretty tasty.I recommend using Earl Grey tea, but other flavors should work too. You can use tea bags too, in which case, use about 3 bags. Rock sugar crystals, raw cane sugar or beet sugar should work too. 30 g is not that sweet, but the resulting liqueur is easy to use. If you are going to use the liqueur in cocktails, use up to 50 g of sugar, but it will be rather sweet. The alcohol content is quite high, so be careful not to drink too much. Try it as a flavoring in baked goods. Recipe by Minori105 cookpad.japan
