  • Halfsmall tuber of yam
  • 3 cupsVegetable oil
  • to tasteSalt
  • For the pepper sauce
  • Coarsely blended Scotch bonnet
  • Coarsely blended onions
  • Left over stew
  • Copped Spring onions

    Peel and slice the yam, wash and drain add a pinch of salt and deep fry into a hot vegetable oil.

    For the sauce, add a little vegetable oil in a sauce pan and sauté with onions, add the left over stew, add the blended pepper, spring onions, fry for 3minutes.

    Enjoy with the fried yam.
