Ingredients

  • 3 cupsparboiled rice
  • 1 cupblended scotch bonnet pepper, red bell pepper and tomatoes
  • 2 tbstomato paste
  • 1/3 Cupcanola or vegetable oil
  • 1large onion bulb
  • 1 tspblended ginger and garlic
  • 2 pcsBay leaves
  • Thyme, Rosemary, curry powder, salt (to taste)
  • 2seasoning cubes
  • Meat stock(either beef, chicken etc)
  • Sweet corn, chopped carrots, red kidney beans, some onion for garnishing(optional)

Steps

    Thoroughly wash the rice, place in a strainer and set aside

    Chop up onion bulb and set asid. I love using the red onion.

    Place a cooking pot over medium heat, when heated up, Sautee the chopped onion for about 3minutes to incorporate the flavor

    Next, add in the tomato paste and stir fry for about 3-5minutes. (This adds a deep and rich tomato flavor)

    Add the ginger and garlic and cook along with the tomato paste for another two minutes. Sprinkle in one of the seasoning cubes

  6. 6

    Now add in the blended peppers and tomatoes and stir fry till the sauce becomes really thick and the oil literally floats on top of the sauce. At this point, you'll notice that most of the water is gone from the blended tomato mix, and the sauce no longer smells raw.

    Add in the thyme, rosemary, Bay leaf, curry powder and salt. Stir up for about 2minutes.

    Add in the washed rice and mix well, then add in the meat stock and thoroughly mix till well mixed. Taste for salt and adjust the salt/seasoning at this point if there is a need to. (Remember the 2nd seasoning cubes to be used here if needed)

    Cover it up with a tight-fitting lid. If your lid is not fitting enough, simply cover the rice with foil paper before covering it with the lid. This is because Jollof needs a lot of steam in order to turn out well.

    Once the rice comes to a boil, reduce the heat to low immediately and continue to cook until the rice is done, about 20 to 30 minutes.

    Now that the rice is done, turn off cooking heat, then add the chopped carrots, green peas, red beans, sweet corn and onions (that's if you decide to garnish, otherwise the rice can be eaten without these)

    Serve with meat or fish of choice and enjoy away.
