Ingredients

  1. 3/4 lbsItalian sausage (3 links)
  2. 3/4 lbsPenne pasta cooked
  3. 8 ozMushrooms sliced
  4. 1small onion diced
  5. 1jalapeño diced
  6. 3-4Garlic cloves minced
  7. 1 cupwhite wine
  8. 1 cupHeavy Cream
  9. 2 Tbspfresh Lemon juice
  10. 3/4 cupgrated pecorino cheese
  11. Chopped green onions for garnish

Cooking Instructions

    If you are using sausage links remove the meat from the casing. Add 1-2 Tbsp olive oil to a large skillet. Heat up oil on medium high heat. Add sausage to skillet and cook through while breaking up the sausage. When cooked transfer sausage, using a slotted spoon, to a bowl.

    Add mushrooms, onion, jalapeño and black pepper to the skillet. On medium heat cook vegetables until soft. Add garlic and stir for 30 seconds.

    Add in wine, and bring to a boil. Reduce until the wine is almost gone.

    Add heavy cream and lemon juice to skillet and simmer for 3-5 minutes to thicken a little. Add pecorino cheese to skillet and mix. Add sausage back into the skillet and mix.

    Add cooked pasta to the skillet and mix. Plate food and garnish with chopped green onions. Enjoy!

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
