Stuffed grape/vine leaves (Yaprak) with artichoke
That is a dish that I've always want to share with you and believe me you'll love it. It worth trying.
Steps
- 1
You can find Eatable Vine leaves in markets and if it is ready for cooking you can use them immediately after their ice is broken, but if they are not you're gonna have to put every single leave in boiled water for 10 to 20 seconds (it gonna gain some color and that is absolutely fine).
- 2
Mix all the stuffing ingredients in a bowl and let them soak for 5 minutes.
Here is where you're gonna start stuffing the leaves (when you look at grapes/vine leave will see that it has a hard side where you can see the veins popped and another soft shiny side) put the leave on its hard side so you can see the soft side. - 3
Take a spoon of the stuffing materials and put it on over the leave. before start rolling them and to prevent the stuffing materials from falling out from the sides you're gonna have to pleat enough part of the sides to make sure that everything stays inside the leaves when you're cooking them.
- 4
When you've rolled enough stuffed rolls (which by the way is going to be a little bit hard if it is your first time) you can start with a little bit of olive oil in a hot pot, when the oil is hot enough put your artichokes your carrots slices your potatoes slices and your garlic and let them all fries until they get some color (but please don't burn them.
- 5
Now make a soiled base with your vegetables and put the stuffed leaves rolls over them (put them close and tight to each other so they can't move and spread when the water starts boiling) when you're done with building your rolls block immerse it in water(you can add some sour lemon juice to the water it gonna take the dish to another level) (You can use a dish with some weight over it so you make sure that nothing will spread inside the pot).
- 6
The dish should be ready in 20 to 25 minutes.
