You can use any vegetables! And also add some tofu or, if you’re not vegan, feta or even a soft boiled egg.
You can keep everything raw but i like to lightly cook most of the vegetables.

Ingredients

For 2 servings
  1. 1/2red cabbage, cut into quarters and cooked for a few minutes in boiling water - add some vinegar to the cooking water so the cabbage doesn’t go blue!
  2. 2-3carrots, sliced into ribbons (using a Y peeler works)
  3. 1fennel bulb, sliced thinly
  4. 1corn on the cob - cooked; or a can of sweetcorn
  5. 2-3tomatoes, sliced
  6. Handfulbroccoli florets, steamed
  7. Handfulsugarsnap peas, steamed
  8. 3-6radishes, finely sliced
  9. 2spring onions, sliced
  10. you can also add some grains eg cooked brown rice or some green leaves
  11. toasted sesame or pumpkin seeds
  12. some lemon zest
  13. For the dressing
  14. 1 tbspwhite miso
  15. 1 tbsptahini (runny or you may need more water)
  16. Juice of 1/2-1 lemon
  17. 2 tbspwater

Steps

    For the dressing: mix everything together. Taste and add as needed.

    Layer all the vegetables in a bowl.

    Add the seeds, lemon zest. Drizzle the dressing on top. Enjoy 😋
