Steps

Cut the onion, green bell pepper, and red bell pepper into bite-sized pieces. Slice the pineapple into 1/2-inch thick pieces.

Trim the edges of the pork loin to remove the membrane, then slice into 1/2-inch thick pieces. Pound the meat with the back of a knife to tenderize, then cut into bite-sized strips.

Mix 1 tablespoon soy sauce, 1/2 tablespoon cornstarch, and 1/2 beaten egg. Add the pork, mix well, and massage briefly. Marinate for 10 minutes.

Mix 4 tablespoons rice vinegar, 4 tablespoons sugar, 5 tablespoons water, 1 tablespoon cornstarch, 1 tablespoon lemon juice, and 1/3 teaspoon salt. Stir well and set aside.

Coat the marinated pork evenly with cornstarch. Heat oil in a pan to 320°F, add the pork, and fry until light golden brown. Remove and strain out any impurities from the oil. Increase the heat to 340-355°F and fry the pork again for about 30 seconds. Remove and drain the oil.

In a wok, heat 1 tablespoon oil, add the onion, green, and red bell peppers, and stir-fry on high heat for 30 seconds. Remove from the wok. Add ketchup to the wok, stir-fry, then add the prepared sauce and bring to a boil.

Add the pork, stir-fry, then add the pineapple, green and red bell peppers, and onion. Stir until the sauce evenly coats the ingredients, then remove from heat.
