1whole roasting chicken
Rub
2 tbspgarlic powder
2 tbspcoarse pepper
1 tbsponion powder
2 tbsporegano
1 tbspthyme
4 tbspold bay
1 tspcayenne pepper

Preheat bbq

Prepare chicken by cutting out backbone and flattening

Put spices in bowl and mix them together
4

Lift skin on chicken and place rub under skin
5

Smooth skin out on chicken and place remaining rub on top of skin
6

Place chicken skin side up on grill for 15-20 mins. Flip chicken to crisp skin then place on indirect heat till done
