Ingredients

  • 200 gmsHakka noodles
  • 4 tbspoil
  • 4-5dry, whole red chilies- cut into slices
  • 1/2 tspchili paste or chili sauce
  • 1/2 tspcrushed garlic
  • to tastesalt
  • 1carrot - cut into julienne
  • 1capsicum - cut into julienne
  • 2-3spring onions- sliced diagonally, keep green separate
  • 1 cupbean sprouts - optional
  • 1 cupshredded cabbage
  • 1/2 tspwhite pepper
  • 1-2 tspsoy sauce
  • 1/2 tspAjinomoto - optional

Steps

  1. 1

    To boil noodles, boiled a pan filled with 10-12 cups water.
    Add 2 tsp salt and 1 tbsp oil. Add noodles to boiling water.

    Stir with a fork. Boil for 1-2 minutes.
    Remove from fire.

  3. 3

    Let noodles be in hot water for 2 minutes. Drain. spread them on a tray. Sprinkle 2-3 tbsp oil on the noodles immediately and mix gently.

    Keep under the fan for 5-7 minutes, of using immediately.
    Heat 2-3 tbsp oil. Add sliced red chilies, chili paste, garlic and white part of onions. stir.

    Add capsicum and carrots. Stir-fry for a minute.
    Add the boiled noodles.

  6. 6

    Add Ajinomoto, salt, and pepper and soy sauce and mix well.

  7. 7

    Add cabbage, greens of spring onion and bean sprouts.
    Mix well and remove from fire.

  8. 8

    Veg Hakka Noodles are ready to serve.
