Blend the oats until fine and grate the carrot. Then mix all the ingredients together (add the carrot last).

Bake in the rice cooker for 20 minutes. I set aside a mug for microwaving to see how it turns out.

Once done, let it cool, then slice the cake. Top with Greek yogurt for a delicious finish. [If you want it sweeter, drizzle with honey.] ➡️➡️ I recommend chilling it before eating for a perfectly soft texture. For the microwave portion, I microwaved at 350W for 2 minutes and it almost burned 🤦♂️, so use a lower power setting.
