Heat the oil in a sufuria, add chopped onions,fry until translucent

Add chopped tomatoes,cook on low heat until the tomatoes are mushy,stirring regularly and breaking up the tomatoe pieces with cooking stick as you stir

Once the tomatoes are cooked,add turmeric powder

Next add the boiled potatoes and cooked maize and beans

Allow the githeri to gently simmer on low heat,giving an occasional stir until the mixture thickens and flavours are well combined

Taste and adjust salt.serve hot,garnish with coriander
