Pickled Eggs
A favourite of mine, also good for picnics
Steps

Boil the eggs for at least 10 minutes in heavy salted water

Drain and plunge into cold / iced water. Tap eggs on side of saucepan to make a crack in the shell, Then peel the shell from the egg.

Put into boiled glass jars, leaving room for the eggs to be shaken and moved around in the vinegar. Add Garlic and spices,chilli if using.

Keep in the jars,shaking contents at least once a week for 4 weeks. Then the eggs should be pickled enough. Can be kept up to 1 year after pickling.

Drain and eat!!!
