No better fun, like that of hunting good recipes.

Make torillia wraps using flour, oil, salt, shortening and water. Grill and keep in kitchen towels to stay warm.

Heat oven and make sauce

Make sauce. Heat pan, add oil when it gets hot. Add onions and minced meat stir fry then add diced carrots and tomato sauce. Cook for a few minutes.

Add seasoning and check taste. Add scotch bonnet and slow cool.

Fill torillia wraps with minced meat tomato sauce and fold tight. Do for remaining.

Take casserole dish and spread some tomato sauce inside. Place all wrapped filled torillias inside... Brush top wirh with more sauce and season a little.

Cook in oven covered with foil sheet for 20-25 minutes.

While enchiladas is cooking blanch runner beans, stir fry and glaze.

Check enchiladas serve with runner beans.
