medium sweet potatoes • a butternut • feta • baby spinach • cherry tomatoes • Light Greek salad dressing or vinaigrette

cooked butternut, drained • cake flour (can add additional if mixture is too sloppy) • baking powder • egg, lightly beaten • salt • Oil for frying • Cinnamon sugar

zest of 3/4 lemon • cream cheese • juice of 1 lemon • honey • vanilla • cream • Topping:  Chopped strawberries and 1/2 cup cream whipped with 1 tsp honey
