Pizza was invented in Naples. The simple margarita was created to honour the queen at the time and resemble the Italian flag, red tomato, white mozzarella and green basil. (So they say). Only the pizza you get in Naples is THE pizza. You haven't tried pizza until you've tried pizza in Naples, trust me. Not even in other parts of Italy can they replicate the original. It's worth going there just to try the pizza!!! But just like Pizzelle fritte are a Christmas Eve tradition for lunch (see my recipe), Pizzette are a New Year's Eve tradition in our house for lunch.
