Im making soup today as a starter before the big Roast Dinner. I was at my sons for Christmas Dinner and it was lovely. Only i felt Cheated because its the first time in years i did not cook christmas Dinner. Today i have Lamb, Turkey Crown and i invited my Daughter Angie and Dan and the kids. Im making soup today as a starter before the big Roast Dinner. I was at my sons for Christmas Dinner and it was lovely. Ingredients

45 minutes
8 servings
  1. 3Leeks chopped
  2. 750 gNew potatoes washed and leave skin on
  3. 6thick Rashes of back bacon any fat remove it
  4. 1 pinchSalt (optional)
  5. 1/2 tspblack cracked pepper
  6. 1dried veg cube

Cooking Instructions

45 minutes
  1. 1

    Add it all to a big pan make sure the water is 1/2 inch above the veg.and boil then cook on medium. After half hour turn Down to simmer.

    While simmering add the salt and pepper.(salt opt)

  3. 3

    Add to a blender in stages as there is too much, I'm freezing some.

    Add back to the pan back on the heat and add more salt and pepper yo your taste.

    Serve Hot with a little cracked black pepper. this soup is gorgeous.
