Cooking Instructions

Mix all under for puri and knead a dough. Cover with a damp cloth and keep aside for half an hour.

After half an hour knead the cough again and take chapati size ball and roll it(not so thick and not too thin). Cut circles with a cutter or any bowl.

Place the circles in a plate and cover with damp cloth. Heat oil in a kadai, when hot add the circles and press it with the laddle(it will puff up)

Turn the other side and fry till crisp. Keep the flame on medium.

Add sugar and salt to the curd and mix well. Strain it through strainer(this will give silky texture)

Mash potatoes and add the kabuli chana and salt and mix well.

Add cumin pdr, red chilli pdr, chat masala and mix well. Adjust accordingly to your taste.

Ready all the items. Green chutney and khatti-meeti chutney.

Make a hole in the puri and fill it with potato stuffing. Add meeti dahi on it.

Add chipped onions, tomato and top with green chutney.

Add meeti chutney, sev, anar and top again with dahi. And some coriander leaves.
