Mini Bites Chicken Pizza

Amazing fusion once again by me in this new version of Pizza, made for a dinner party at home. I just made mini roundels out of the pizza dough and arranged them all in a circular shape similar to that of a pizza base. Rest of the process remains similar to that of a normal pizza. Beautiful looks and cheesylicious to the last bite. A perfect main course for any party, it will be a sure shot hit. You will just love it's awesome and melt in mouth texture.
Cooking Instructions

Add sugar and yeast to warm milk and mix lightly. Allow it to prove for 4 to 5 minutes. It should be frothy and also a bit smelly. If not discard it and make a fresh one. This is really important for a good pizza base.

In a mixing bowl, add flour, salt and the olive oil. Now add this yeast mix to the flour and make a smooth dough out of it. Knead this dough until it's smooth and apply a few drops of olive oil to it and cover it up with a cling wrap and leave it in a dark place in your kitchen to double up in volume.

Meanwhile, cut the veggies and keep aside. In a pan, heat a tablespoon of olive oil and saute the garlic mince. Add the boneless chicken cubes to it. Add all the ingredients listed in it's preparation before covering with a lid.

Saute them all on a low heat. Allow it to simmer until done. Next take out the dough and punch it down once to release the air. Grease a pizza pan and start making roundels of the dough.

Make medium sized balls out of it. Similarly make all in this way covering the whole pan. Next spread some pizza sauce and the toppings. Bake this in a preheated oven on 180° for 18 to 20 minutes or little more. It depends on the oven temperature. So keep an eye after 15 minutes.

After it is baked perfectly, it's time to add in the Cheese generously. Sprinkle shredded Mozzarella Cheese and tear the Cheddar slices on top of it followed by some Italian seasoning. Pop it back in the Oven just until the Cheese melts. Cheesyliciously yours to dig in now. Gooey and cheesy to the last bite.

I couldn't get the hang of making pizza on a pizza stone but as soon as I put it in an old-fashioned grill, it came out perfectly! It's best to use a skillet as well.The pizza will expand right before your eyes and generate a wonderful smell! I used an old-fashioned grill that can only grill from above. Somehow I think this shortcoming may have become an advantage though. The only thing is that it can't handle larger pizzas. If you have a burner, maybe you could try using that as well. I think a lot of people place the cured ham on top after the pizza has baked, but I can't be bothered with that, so I bake it with the ham already on. It's strange but the taste of the cured ham remains, without it burning.Baking your pizza in one go at 300℃ oven is the objective here. If your oven can't go up to 300℃, then you can bake the pizza pie base for 3-4 minutes without letting it burn. I started making this crust because I wanted to make a Neapolitan style pizza in an oven we recently bought that can heated up to 300°C. Just spread the dough out to fill an oven sheet, top with anything you like and bake! It tastes so good fresh out of the oven, and everyone loves it.Use a sturdy plastic bag such as a freezer bag, and it won't rip when you're kneading the dough.When you're adding the toppings to the pizza, if you arrange them in sections, you can enjoy different flavors without getting bored.
