It's true, I know, pizza is something divine! But unfortunately, all that yeast stays with me for days! So what to do? I swap out the pizza dough for light puff pastry instead! 🍕

Remove the puff pastry from the fridge and let it sit at room temperature for 2-3 minutes. Unroll it, keeping the parchment paper underneath, and use a round cookie cutter to cut out 14 circles. Poke the center of each circle with a fork, then remove the excess dough.

Use a spoon to spread tomato puree over the center of each circle where you poked holes, then add salt, pepper, oregano, and finally a drizzle of olive oil.

Bake in a preheated oven at 400°F (200°C) for about 10-12 minutes. Remove the baking sheet with the mini pizzas from the oven, add a bit of mozzarella cut into small cubes, and bake again for 4-5 minutes (baking time may vary depending on your oven). Remove from the oven, let cool for a few minutes, and serve. Delicious hot or cold, however you prefer!
