Low-Carb Chicken Spinach & Mushroom Bake

Ingredients

6 servings
  1. 6chicken breasts
  2. 1 bagfresh spinach
  3. 1 (8 oz)container sliced mushrooms
  4. Lemon pepper, garlic powder and season all
  5. 2 (8 oz)boxes of cream cheese
  6. 10 ozchicken broth
  7. 1/4 cupvegetable oil
  8. 8 ozshredded mozzarella cheese (or more if you'd like)

Cooking Instructions

    Preheat oven to 375 degrees.

    In a 9x13 casserole dish single layer chicken.

  3. 3

    Layer with spinach.

  4. 4

    Layer with mushrooms.

  5. 5

    Sprinkle seasonings.

  6. 6

    In a bowl whisk oil, chicken broth and softened cream cheese.

  7. 7

    Spread over the mushrooms.

  8. 8

    Lay foil over top of dish but do not seal and place in oven and bake for 20 minutes.

    Remove foil and bake uncovered for 25 minutes.

  10. 10

    Add mozzarella and bake uncovered for another 10 minutes.

The recipe was changed...originally it had onion cream cheese and Weber herb and garlic seasoning, which was MUCH better!!
