Busy day so used a soup-maker. Child’s play - 5 or so minutes’ prep, then push the button and retire! You have less control to make adjustments than if you’re making it in a stock pot/saucepan and it only really works for smallish quantities but the resultant soup is good and it’s a real time saver.

Ingredients

27-30 minutes including prep
4-6 servings
  1. 1onion, roughly chopped
  2. 1potato, roughly chopped
  3. 1carrot, roughly chopped
  4. 3 clovesgarlic, chopped
  5. 1 stickcelery, roughly chopped
  6. 1x 400 g tin chopped tomatoes
  7. 1 tspdried oregano
  8. 1 litrevegetable stock (I use “Marigold” bouillon powder)
  9. 1small handful red lentils
  10. to tasteSeasoning
  11. Parsley or coriander to garnish (optional). I haven’t today

Cooking Instructions

27-30 minutes including prep

    Put all the ingredients except the seasoning and garnish into the soup-maker.

  2. 2

    Push the start button and occupy yourself until the soup-maker cycle is finished (typically 22-25 minutes) or leave it until you’re ready.

  3. 3

    Taste and add seasoning if wished - but might be unnecessary. Add the garnish if wished and enjoy with some nice bread.
