Vegetable Massala Poha

Take poha in a large bowl,add water,wash it and rinse it. Again pour some water,rinse it and let it sit for 10 minutes in strainer.

Heat a pan with oil and fry the peanuts on a medium heat until golden and crunchy.

Remove the peanuts to a plate and set aside. To the same pan add mustard and cumin seeds and let it crackle then add curry leaves.

Add onion and cook it until it turns golden brown. Then add capsicum and cook it for 2 minutes. At last add tomato and cook them till they are soften.

Now add massala turmeric powder,red chilli powder, coriander powder,salt and garam massala. Mix them well.

Then add poha and mix it well. At last add some sugar, lemon juice and peanuts. Stir all together and again stir it for 2-3 minutes.

Serve hot.
