Ingredients

  1. 2Large Rib Eye cuts of beef
  2. Sweet potato
  3. Brocolli
  4. Salt and Pepper
  5. 2 tablespoonolive oil
  6. 2 clovesgarlic finely chopped
  7. 40 gunsalted butter
  8. Chopped parsley

Cooking Instructions

30 mins

    Peel and cut sweet potatoes into cubes, simmer for 20mins in a pan with 2 teaspoons of salt

    Drain the potatoes and add butter, garlic, salt and Parmesan

  3. 3

    Mash the potatoes, add a splash of milk if required

  4. 4

    Add oil and seasoning to griddle pan and put on a high heat, cook the steaks for 3 mins either side and then let them rest for 8 mins

  5. 5

    Slice the steaks and serve with the sweet potato mash (chopped parsley ontop) and sautéed brocilli
