Cooking Instructions

For Rabri-Heat half an ltr of milk in a pan. Mix a little saffron and mix well. Then add green cardamom powder to it and cook well.

Then add chopped dry fruits. Cook it on low flame. Then add sugar and cook on low flame till it thickens. Then add a little yellow food color to it so that it tone looks good.

For Chaina (paneer)- Heat 1 ltr milk in a pan. After boiling, add some vinegar to it. Vinegar has to be mixed with water, not put it directly.

Turn off the gas after boiling the milk. Then add vinegar water and separate the paneer by gently stirring.

Then add ice water in it to cool down the paneer. Then strain it with the help of a cloth and add cold water again and again under tight tightness.

For Rasgule- in a wok add 2 cups of sugar and 6-7 cups of water and make it boil.

Then take paneer out on a big plate.

Then knead the paneer like dough with the help of the palm of your hand. Knead the dough to soften it like butter. then add 1/4 tbsp of cornflour mix it well. adding of cornflour is optional.

Then make small balls from it. Then press it in the hand to give the perfect shape.

Then add the balls in sugar syrup and cook for 15 mins by covering it. Turn it over and over again. then leave it in the pan for 10 mins.

In a bowl add some ice cubes. Then add some sugar syrup to it. Then add regular in it. Cool it down for 1/2 an hour.

Then press it with the hand so that some water comes out of it. Then add regular in prepared Rabri. Then leave it in it 2_3 hours. Garnish with dry fruits during serving.
