This is a lovely winter warmer and the bubbling pot bubbling smells delicious! It’s one of those soups that is even better when it has sat for a while, perfect to come back to after a chilli walk! Ingredients

45 minutes
2 people
  1. 1 cupdried green split peas
  2. 1 cupfrozen peas
  3. 1 large potato - cubed
  4. 1small onion - diced
  5. 1 stick celery - diced
  6. 1carrot - diced
  7. 3 - 4 cups stock (or water)
  8. Salt and pepper
  9. 1bay leaf
  10. A Pinch of celery salt (optional)
  11. 1 splashvegan Worcestershire sauce (optional)
  12. 1 splashoil
  13. 1 slice bread
  14. 1 cubevegan butter

Cooking Instructions

45 minutes
  1. 1

    Soak the spot peas for 8 hours (or quick soak by boiling, turning off heat and soaking for an hour). Heat the oil and pan fry the onions, celery and garlic until they just start to colour. Add the bay leaf.

    Wash soaked peas and add to the pan. Add the stock and cook until they start to soften (around 35 minutes) Whisk so some of the peas break down.

    Add peeled and cubes potatoes snd cook until soft. It will take around 10 minutes. Add fresh peas and cook until hot. Season and serve. I served with buttered toast soldier’s to dip
