Spring Cleaning Spiced Lentil Soup

I have had a clear out of my kitchen cupboards and found so many packets I forgot about! Quinoa, risotto rice, desiccated coconut, chia seeds and so many bags of lentils! This recipe is based on a Michael Mosely recipe that I love.
Cooking Instructions

Gently toast the cumin seeds in a dry saucepan for 2-3 minutes until aromatic then top into a small bowl and set aside.

Fry the onions in some oil for 5 mins then add the crushed garlic and continue to cook for a few more minutes.

Stir in the toasted cumin seeds, coriander, salt and pepper. Add the lentils and stir well.

Then add the stick, lemon juice and coconut milk. It all looks like a milky puddle at this stage, don’t panic! Cover and leave to simmer for 30 mins,

Twas the night before payday, and all through the kitchen, not a meal was in sight, not even leftovers.So I pulled this together with odds and ends. It was way better than I expected. You could probably sub in any veggies you have laying around, or any starch (rice or barley or pasta) instead of lentils and potatoes. That's what's so awesome about soup.Note that I only had about a quarter cup of lentils to use and most of those sunk to the bottom.
