I have had a clear out of my kitchen cupboards and found so many packets I forgot about! Quinoa, risotto rice, desiccated coconut, chia seeds and so many bags of lentils! This recipe is based on a Michael Mosely recipe that I love.

Ingredients

30 mins
4 servings
  1. 2 tspcumin seeds
  2. 2 tspground coriander
  3. 1red onion finely diced
  4. 3 clovesgarlic, crushed
  5. 1/8 tspblack pepper
  6. 1/4 tspsalt
  7. 400 mlslight coconut milk
  8. 600 mlsveg stock
  9. Juice of 1/2 lemon
  10. 140 gred lentils

Cooking Instructions

  1. 1

    Gently toast the cumin seeds in a dry saucepan for 2-3 minutes until aromatic then top into a small bowl and set aside.

    Fry the onions in some oil for 5 mins then add the crushed garlic and continue to cook for a few more minutes.

    Stir in the toasted cumin seeds, coriander, salt and pepper. Add the lentils and stir well.

    Then add the stick, lemon juice and coconut milk. It all looks like a milky puddle at this stage, don’t panic! Cover and leave to simmer for 30 mins,
