This is a recipe that was shared by a co-worker. It is her mom's recipe. I have modified some of the proportions. It is a bit spicy, so if you prefer, you can reduce the crushed red chilies to 1/2 tsp.

Ingredients

  1. 1large sweet onion chopped
  2. 3 Tbspolive oil
  3. 2garlic cloves chopped
  4. 1/2 tspground cumin
  5. 1 cupmixed lentils
  6. 1 tspcrushed chilies
  7. 4carrots diced
  8. 4 stalkscelery diced
  9. 2bay leaves
  10. 2 cartonsvegetable broth
  11. 1 Tbspred wine vinegar

Cooking Instructions

  1. 1

    Saute onions in olive oil in a large saucepan over medium heat.

    Add garlic and cumin and saute a bit longer until all is starting to turn a golden colour.

  3. 3

    Add remaining ingredients, except vinegar and bring to a boil.

  4. 4

    Cover and reduce heat to low. Simmer, covered for about 40 minutes.

  5. 5

    Uncover and add vinegar. Simmer an additional 10 to 15 minutes.
